Light cheese cake originated in Hakada, Japan in 1948 with the name "Uncle Tetsu". It was favored greatly by people rapidly with a less sweet flavor and fewer calories that is more suitable for Asian culture.
Different from standard cheesecake, light cheese cake is made with cream cheese, butter, sugar, whipped cream and eggs. It contains less cheese and sugar. Similar to chiffon cake, light cheese cake has a fluffy texture produced by whipping egg white and egg yolk separately.

In 2011, "Uncle Tetsu" opened the first store in Taiwan and was instantly a hit after being reported on by a famous TV show, "Kangxi is coming". Outside Japan, the brand has more than 70 shops across China, as well as in Singapore, Thailand, Malaysia, Philippines, Cambodia, and Canada.
"Uncle Tetsu" entered the Chinese market in 2013 and then created a sales miracle in Shanghai that people have to queue up for hours to get the cakes that were limited to 2 pieces for each consumer. A copycat company set up 30 fake Uncle Tetsu locations in China in 2013, and in a 2014 court settlement it was ordered to pay $160,000 USD.
The first Uncle Tetsu outside Asia opened in 2015, in Toronto, Canada. Customers lined up for around 1-2 hours to purchase the Japanese cheesecake at $10 CAD apiece, with a limit of one per customer.
